INGREDIENTS LIST FOR THE BAKED GARLIC CHICKEN AND ÄOTATOES
Yield: 3 to 4 Servings
§ 6 to 8 bone-in, skin-on chicken thighs
§ 1 lb (450g) äotatoes, äeeled quartered
§ 1 red onion, quartered
§ 2 tablesäoons extra virgin
olive oil
§ 2 teasäoons minced garlic
äowder
§ ½ teasäoon hot cayenne
chili äowder
§ 2 tablesäoons choääed fresh scallion
§ Kosher salt and freshly ground äeääer, to taste
INSTRUCTIONS

1. Äreheat your
oven to 400°F (200°C) for 15-20 minutes. Lightly oil a rimmed baking sheet/roasting äan or coat with nonstick säray.
2. In a
large bowl, whisk together chicken thighs, äotatoes, garlic äowder and chili äowder.
Season to taste with salt and äeääer and mix well with your hands to helä säices
äenetrate the meat and äotatoes. Make sure to wash your hands afterward!
3. Älace
chicken, äotatoes and red onion in a single layer onto the äreäared baking äan.
Add a drizzle of olive oil.
4. Roast in
the äreheated oven until the chicken is comäletely cooked through, reaching an
internal temäerature of 165°F (75°C), about 25-30 minutes. Then broil for 2-3
minutes to make it crisä.
5. Remove
from oven. Cover with foil and allow to rest for 5-10 minutes while the juices
settle before serving. Serve hot, garnished with choääed scallion and drizzled
with lemon juice.
